    Spiced Meatloaf Recipe

    A healthy and superb tasting recipe. Try this for dinner today.

    Spiced Meatloaf

    Serves about 8 hungry guests
    Preparation Time about 20 minutes
    Cooking Time about 65 minutes

    Ingredients:

    5 cloves of garlic
    2 organic (if possible) celery stalks, coarsely chopped
    1 small onion, coarsely chopped
    1 cup mushrooms, coarsely chopped
    1/4 cup coconut flour
    2 tablespoons chia seeds, soaked in 1/2 cup water for 20 minutes
    1/2 tablespoon chilli powder
    1 teaspoon freshly ground black pepper
    1/4 teaspoon plus a pinch ground cinnamon, divided
    1/4 teaspoon ground nutmeg
    1 teaspoon sea salt
    1kg of ground organic turkey or chicken (preferably dark meat)
    1/3 cup tomato paste
    1 medium spring onion, finely chopped
    juice from 1/4 organic orange, plus zest of half the orange
    Preparation:

    Preheat the oven to 190°c.  Place a rack in the centre.

    In a food processor, mix the garlic, celery, onion and mushrooms until very finely chopped. In a large bowl, combine the vegetables with the coconut flour, chia seeds, chilli powder, oregano, paprika, cayenne, nutmeg, salt, 1/4 teaspoon cinnamon, and pepper. Add the turkey or chicken and, using your hands, mix until combined; do not over mix, or the meatloaf will become dense.

    Gently pat the meat into a loaf, and place in a 20cm by 10cm loaf pan. Place the pan on a rimmed baking sheet. Bake for 50 minutes.

    Meanwhile, in a small pan, heat the tomato paste and spring onions over medium heat.  Add remaining cinnamon and stir to combine. Gently simmer on medium – low heat for 5 minutes.  Remove from heat and stir in orange juice and zest.

    Brush the top of the loaf with the tomato mixture after 50 minutes; continue cooking for about 10 more minutes.

    Remove from the oven; let rest for 10 minutes.

    Nutritional analysis per serving (1 slice): Calories 205, Fat 8 g, saturated fat 1 g, cholesterol 64 mg, fibre 3 g, Protein 24 g, Carbohydrate 9 g, Sodium 341 mg.
