    3 Tasty Matcha Green Tea Recipe Treats

    You don’t just have to drink matcha to enjoy its benefits. Here are three easy recipes to treat yourself to some matcha goodness – of the baked variety!

    Matcha green tea is traditionally enjoyed as a drink. However, we have sourced the net and come up with these tastebud tantalising treats you can bake using the matcha tea you love.

    Green tea cupcakes with red bean buttercream frosting

    This is a Japanese-inspired cupcake recipe making lovely dark green cupcakes with pink-coloured frosting.

    Makes: 16 cupcakes

    Cupcake ingredients

    • 1 cup granulated sugar
    • 1 3/4 cups cake flour, not self-rising
    • 1 1/2 teaspoons baking powder
    • 1/2 teaspoon baking soda
    • 1/2 teaspoon salt
    • 2 tablespoons matcha powder
    • 1 teaspoon ground ginger
    • 1/4 cup unsalted butter room temperature
    • 2 large eggs room temperature
    • 1/3 cup plain yogurt
    • 1/4 cup canola oil or vegetable oil
    • 2/3 cup whole milk

    Frosting ingredients

    • 1/2cup unsalted butter at room temperature
    • 3/4 cup smooth/fine red bean (azuki paste)
    • 1/4 teaspoon salt
    • 1 1/2 cups powdered sugar

    Instructions

    1. In a bowl mix together sugar, cake flour, baking powder, baking soda, salt, matcha powder and ginger.
    2. Add butter and mix on medium-low speed for three minutes. You will end up with a fine crumb texture.
    3. In a small bowl whisk eggs, yoghurt and oil until smooth.
    4. Add the egg mixture to the flour mixture and beat on medium speed until just combined.
    5. Slowly add the milk and mix on low speed until just combined. The batter will be very watery, but it is supposed to be like that.
    6. Fill cupcake liners just over half full. Then bake in pre-heated oven at 180 degrees for 14 minutes. They are done when a toothpick comes out without any wet batter stuck to it. Leave another two minutes if they need a little longer.
    7. When done, remove the cakes from the tin and leave them a cooling rack to cool.

    Frosting instructions

    1. Mix butter on high speed until light and fluffy, about three minutes.
    2. Mix in the red bean paste until smooth, then the salt.
    3. Mix in powdered sugar bit by bit until all combined.
    4. Spread or pipe over cooled cupcakes.

    Chocolate matcha energy balls

    These energy balls (or bliss balls as some like to call them) give you a power hit when you need a little pick-me-up. These balls are perfect to have with a cup of your favourite Bondi Beach Tea.

    Makes: 10 balls

    Recipe inspired by The Healthy Maven

    Ingredients

    • 1/2 cup soft, pitted dates (Medjool dates are perfect for this)
    • 1/2 cup raw almonds
    • 1/4 cup cacao powder
    • 1 teaspoon matcha powder (plus a little more for dusting)
    • 1 teaspoon unsweetened almond milk

    Instructions

    1. Add all ingredients to a food processor and process until they come together as a sticky mass.
    2. Once combined, remove from the processor and roll into small balls.
    3. Roll the completed balls into a small amount of matcha powder to coat when finished.
    4. Store balls in the fridge for up to two weeks. They can also be frozen and thawed when needed.

    Matcha green tea mochi

    This is a Japanese rice cake favourite, usually shaped into balls. This super easy recipe sees the mochi prepared into slices being baked in a sheet pan instead.

    Makes: 12 slices

    Ingredients

    • 1 cup white rice flour
    • 1 cup coconut milk
    • 2 tablespoons matcha powder
    • 1/2 cup sugar
    • 2 tablespoons butter (melted)
    • 1 teaspoon baking powder

    Instructions

    1. Pre-heat oven to 160 degrees.
    2. Spray baking dish with non-stick baking spray.
    3. Mix all dry ingredients.
    4. Add melted butter and coconut milk. Stir well
    5. Place mixture into baking dish (an 8x8 pan is perfect).
    6. Bake for 20 minutes or until cooked in the middle.
